It's Shrove Tuesday (aka Pancake Day) and a great way to breakup the humdrum of the working week with a cheeky mid-week treat...
No matter whether you're at home or the office, take some timeout to enjoy a pancake (or two)!
To help you get prepared, we've got a couple of our favourite recipes for you to enjoy. One for the masses who sucumbe to the decadence of the traditional, light & fluffy pancake topped with the lot and one delicious gluten-free, sugar-free and vegan pancakes for the health nuts.
Grandma's Pancake Recipe
Ingredients (serves 4)
- 500 ml milk
- 1 egg
- 2 teaspoons vanilla extract
- 2 cups self-raising flour
- 1/4 teaspoon bicarbonate of soda
- 1/3 cup caster sugar
- 25 g butter, melted
- Extra butter
- Ice-cream, chocolate or maple syrup or classic lemon & sugar (to serve)
Method
Step 1
Preheat your barbecue or pan ready for the cook-up.
Step 2
Grab a jug and whisk the milk, egg & vanilla together until just combined.
Step 3
In a separate bowl, mix the flour, bicarb & sugar. Make a hole in the centre of the dry mixture and add the milk mixture and melted butter. Whisk until well combined.
Step 4
Once the barbecue is preheated, turn all burners or stove to medium. Melt a little extra butter on the hotplate/pan to grease.
Step 5
For each pancake, spoon a ladle of the mixture on to the hotplate. Make sure a gap is left between each pancake.
Step 6
Close the bbq hood and cook the pancakes for 1 to 2 minutes. Open the lid and flip the pancakes. Cook for a further minute.
Health Nut's Gluten-Free Buckwheat Banana Pancake Recipe

Ingredients (serves 4)
- 1 cup buckwheat flour
- 1 tbsp agave nectar
- 1 cup unsweetened almond milk
- 1 ripe banana, mashed
- 2 tbsp ground flax
- 1 tsp baking powder
- 1 tsp baking soda
- ⅛ tsp pink Himalayan salt
- Coconut oil, for the skillet
- Toasted almonds, banana slices and raw honey (to serve)
Method
Step 1
Preheat your barbecue or pan ready for the cook-up.
Step 2
In a large bowl, mix the buckwheat flour, ground flax, salt, baking powder and baking soda.
Step 3
Add mashed banana, vegan milk and agave syrup to the dry ingredients and mix to combine, until you obtain a thick but runny batter.
Step 4
Once the barbecue is preheated, turn all burners or stove to medium. Melt a little extra butter on the hotplate/pan to grease.
Step 5
Scoop ¼ cup batter onto the BBQ or pan and cook until little bubbles appear on the surface (about two minutes). Flip over and cook for two more minutes.
Step 6
Transfer on a plate and cover with a clean towel to keep warm.
Step 7
Continue the same with the remaining batter, greasing the BBQ/pan every time you start a new pancake.
Step 8
Before serving, top with banana slices, toasted almonds and a drizzle of organic raw honey.
